What is the difference between soffit and fascia?

Fascia is the vertical trim along the edge of the roof, where the eavestrough attaches. Soffit is the horizontal surface under the overhang, between the fascia and the wall. Vented soffit also lets air into the attic.

Should I replace my eavestrough at the same time as soffit and fascia?

It usually makes sense. The eavestrough is fastened through the fascia, so it has to come down to replace the fascia. Doing everything at once means one setup.

Are gutter guards worth it?

They help most if your house is near trees. Guards keep leaves out so the eavestrough keeps draining. They still need an occasional check.
